Chickpea “Tuna” Salad with Dill and Pickled Onion

Do we really need tuna to emulate the texture and flavor of tuna salad? I would argue mashed chickpeas are pretty close and better for the environment.

INGREDIENTS

  • 1 can chickpeas
  • Mayo
  • Greek Yogurt
  • Dijon Mustard
  • Lemon
  • Pickled Red Onion
  • Nori
  • Dill

INSTRUCTIONS

  • Drain and rinse your chickpeas
  • Mash with a potato masher or small cup
  • Whick together a large spoonful of Greek Yogurt, squirt mayo, 1/2 lemon, tsp mustard,
  • Add chopped pickled red onion, dill and crunched up nori.
  • Mix
