Chickpea “Tuna” Salad with Dill and Pickled Onion
Do we really need tuna to emulate the texture and flavor of tuna salad? I would argue mashed chickpeas are pretty close and better for the environment.
INGREDIENTS
- 1 can chickpeas
- Mayo
- Greek Yogurt
- Dijon Mustard
- Lemon
- Pickled Red Onion
- Nori
- Dill
INSTRUCTIONS
- Drain and rinse your chickpeas
- Mash with a potato masher or small cup
- Whick together a large spoonful of Greek Yogurt, squirt mayo, 1/2 lemon, tsp mustard,
