Oat Cake Recipe Ingredients
Dry Ingredients:
1 cup oat flour (you can seriously blend regular oats for 10 seconds!), 1 1/4 cup almond flour, 2 tsps baking powder, 1 tbsp ginger, 1/4 tsp salt
Wet Ingredients:
1/2 cup yogurt, 1/2 cup olive oil, 1 cup sugar, 1 pear (softer the better), 2 eggs, 2 tsp vanilla, walnuts (optional), powdered sugar (optional)
Easy Oat Cake Recipe Steps
1) Pre-heat oven to 350
2) Blend the pear until smooth – remove pit
3) Mix all the wet ingredients together
4) Blend your oats if using
5) Mix the dry ingredients together
6) Combine the wet and dry into VERY GREASED pan – I used coconut oil spray and some still stuck to the bottom! Luckily even if that happens the top still looks cute. This cake will cook for 50 minutes to an hour.
7) Chop your walnuts and cover with maple syrup and ginger – add to the oven with 10 minutes of baking left
8) Mix 1/4 cup powdered sugar with a drizzle of maple syrup. I added a splash of yogurt for some tang. Could add some extra ginger here too.
9) Let your cake cool for a bit before plating and covering with icing and then topping with candied walnuts!
