Feta and Olive Zucchini Roll Ups

This recipe was developed for Matriark Foods

INGREDIENTS

  • 3 large zucchini
  • Marinara sauce – look for Matriark’s Spicy Arrabbiata
  • Feta
  • Olives
  • Yogurt

INSTRUCTIONS

  • Get the widest zucchini you can find. Use a mandolin or knife to cut long, thin slices.
  • Place on a baking sheet and drizzle with olive oil and bake at 350 for 10 minutes to soften
  • Use an 8oz block of feta and save 1/4 for crumbling at the end. Place in a food processor with a spoonful of yogurt, chopped olives and a splash of water. Blend until smooth
  • Spread mixture inside each zucchini strip and roll
  • Place rolls in a baking dish with your sauce of choice on the bottom
  • Top with extra feta and olives
