Mint Chocolate Black Bean Cookies
Ingredients:
- 1 can black beans, rinsed and drained
- 2 tbsp almond butter
- 2 tbsp olive oil
- 2 tbsp milk (any kind)
- 3 tbsp cocoa powder
- 12 Andes mints
- 1/2 cup maple syrup
- 3 tbsp flour
- 1 tsp baking powder
- 3/4 tsp salt
Instructions
- Preheat oven to 375
- In a food processor (or blender) blend the rinsed black beans, almond butter, olive oil, milk and maple syrup
- Add in the cocoa powder, flour, baking powder and salt and blend until smooth
- Chop the Andes mints and mix into bowl
- Line a baking sheet with parchment and spoon 12 dollops of batter or more, depending on your cookie size.
- Bake for around 10 minutes. I gently flattened mine with a cup.
- Let cool completly so they will firm up
