Mint Chocolate Black Bean Cookies

Ingredients:

  • 1 can black beans, rinsed and drained
  • 2 tbsp almond butter
  • 2 tbsp olive oil
  • 2 tbsp milk (any kind)
  • 3 tbsp cocoa powder
  • 12 Andes mints
  • 1/2 cup maple syrup
  • 3 tbsp flour
  • 1 tsp baking powder
  • 3/4 tsp salt

Instructions

  • Preheat oven to 375
  • In a food processor (or blender) blend the rinsed black beans, almond butter, olive oil, milk and maple syrup
  • Add in the cocoa powder, flour, baking powder and salt and blend until smooth
  • Chop the Andes mints and mix into bowl
  • Line a baking sheet with parchment and spoon 12 dollops of batter or more, depending on your cookie size.
  • Bake for around 10 minutes. I gently flattened mine with a cup.
  • Let cool completly so they will firm up
