One Pot Harissa Chickpea Bake
This one-pot meal is cozy, flavorful, and perfect for when you want something hearty with minimal dishes. Everything bakes together — just mix, cover, and let the oven do the work.
Ingredients
- 1 cup rice
- 1 can diced tomatoes
- 1 can chickpeas, drained and rinsed
- ½ cup harissa (I love using Mina brand — or sub chili powder if you don’t have harissa)
- 1 tbsp capers
- 1 tbsp dried oregano
- 2 cups water
- ½ block of feta (add more at the end)
- A handful of chopped spinach
Instructions
- Preheat your oven to 350°F (175°C).
- In a large baking dish or oven-safe pot, combine all ingredients. Stir well to mix.
- Cover tightly with a lid or foil.
- Bake for 1 hour, stirring halfway through.
Check at 45 minutes to make sure the rice isn’t overcooking — every oven is different. - If it still looks watery at the end, bake uncovered for a few extra minutes until the liquid is absorbed.
- Top with more feta and serve warm.
