Trans Pride Flag Cake
INGREDIENTS FOR TRANS PRIDE FLAG CAKE
- 2 cups Jasmine rice
- 1 can coconut milk
- 1 1/2 cups water
- 1 tsp sugar
- 1 tsp salt
- Red Cabbage
- Lemon
- Blue Spirulina Powder
- Sesame-Date Cabbage:
- Red Cabbage (you can substitute this for broccoli if cabbage not your things)
- Dates
- Lemon
- Sesame Seeds
STEPS FOR TRANS PRIDE FLAG CAKE
1. Place 2 cups of rice with the coconut milk, water, salt and sugar in a pot and bring to a boil
2. Once boiling, return to a simmer and leave for 20 minutes covered
3. Meanwhile, take your red cabbage and slice off about 1/4 and chop into smaller pieces. Take this cabbage and place in a small pot of water and bring to a boil. After about 5 minutes you should start to see the water becoming purple. Once the color is strong, drain the cabbage but be sure to catch the special purple water
4. After 20 minutes the water in the rice should be completely absorbed. If there is any moisture left, cook for an additional couple minutes uncovered
5. Divide the rice into 2 bowls while also reserving some to make the inner white line of the flag
6. Place 1/2 tsp of blue spirula into one bowl of rice and a couple tsps of the purple cabbage water into the other. NOW, the magic is that the rice will be purple, but when you squeeze your lemon, this purple changes to pink! color magic.
7. Arrange your rice as you see in the picture above. Post your flag and show the love and support you have for the trans community.
8. If you want to make some delicious cabbage to serve with your rice, before cooking the rice I would chop up the rest of the cabbage not using for making purple water and roast with a drizzle of olive oil and salt/pepper. Once soft (about 45 minutes) chop a handful of dates and add the cabbage and dates to a bowl, squeeze of lemon and top with sesame seeds if you have.
