Banana Pecan Rose Muffins

INGREDIENTS

  • 2 cups rolled oats uncooked
  • 1 tsp baking poweder
  • 1 tsp baking soda
  • 1/4 tsp fine salt
  • 1 tsp ginger
  • 2 large eggs
  • 1/2 cup milk of choice
  • 1 cup roasted sweet potato
  • 1/3 cup maple syrup
  • 1/4 cup melted coconut oil
  • 1 banana cut in pieces
  • Handful of pecans

INSTRUCTIONS

  • Preheat oven to 350
  • Blend all ingredients in a blender expect the banana and pecans
  • Mix the banana and pecan pieces into the batter
  • Spray your muffin tin or rose mold with coconut oil or other baking spray
  • Bake for 20-25 minutes
