Banana Pecan Rose Muffins
INGREDIENTS
- 2 cups rolled oats uncooked
- 1 tsp baking powder
- 1 tsp baking soda
- 1/4 tsp fine salt
- 1 tsp ginger
- 2 large eggs
- 1/2 cup milk of choice
- 1 cup roasted sweet potato
- 1/3 cup maple syrup
- 1/4 cup melted coconut oil
- 1 banana cut in pieces
- Handful of pecans
INSTRUCTIONS
- Preheat oven to 350
- Blend all ingredients in a blender expect the banana and pecans
- Mix the banana and pecan pieces into the batter
- Spray your muffin tin or rose mold with coconut oil or other baking spray
- Bake for 20-25 minutes
