Cilantro-Feta Black Bean Burger Recipe

Ingredients:

  • *Will make about 8 burgers
  • 1 can black beans
  • ⅓ cup grain of your choice (farro, quinoa, brown rice)
  • 2 eggs
  • 1 cup bread crumbs
  • 1 tsp cumin
  • 1 tsp paprika
  • 1 yellow onion
  • 2 cloves garlic
  • 3 inch block of feta
  • Diced cilantro or any herb you have on hand
  • Optional:
  • Harissa
  • Burger buns
  • More cheese
  • Crispy Lettuce

Steps:

1. Cook your grain according to the directions on the package! (I made farro and it took about 30 minutes simmering)

2. Rinse your black beans (if you are using dried be sure to cook ahead of time)

3. Saute your diced onion and garlic and add your squirt of harissa if using until soft

4. Take 1 cup of the beans into a food processor or blender to make a paste, if you want to keep it easier you could just mash with a fork

5. Place your mashed beans, remaining full bean, bread crumbs, cumin, paprika, onion/garlic mixture, eggs, feta, and cilantro

6. Refrigerate the mixture for 30 minutes to firm it all up

7. Make into patties and cook with some olive oil in a pan until crispy on both sides. Could also try baking in the oven.

8. Top with anything you can dream of. I am going to eat with a Yogurt Dill sauce for dinner tonight.
